Jimmy is an Assistant Professor in Food and Nutritional Sciences at the School of Biological Sciences, The University of Hong Kong. His doctoral studies deal with aspects of glycaemic index and gestational diabetes but he has a wider interest in nutrition and chronic diseases. Jimmy is experienced in conducting laboratory based studies, short term acute feeding trials, randomized controlled trials, as well as nutritional epidemiological analyses.
Jimmy's research interests span from public health nutrition and nutritional epidemiology to medical nutrition therapy and nutritional sciences. On the nutritional epidemiology side, Jimmy is experienced in performing secondary analyses on large cohort datasets and national nutrition surveys; on the public health nutrition side he was involved in projects related to front-of-pack labelling. He is also collaborating with the George Institute for Global Health to conduct research into the nutritional quality of the Australian food supply.
In addition, he has compiled the first database of added sugar content of Australian foods. Jimmy is also interested in the medical nutritional therapy for gestational diabetes mellitus and type 2 diabetes. Apart from these he also has an active interest in researching the use of coffee as a functional food for glycemic control.
