Objectives
1 The objectives of this project are: to carry out transcriptomic and proteomic analyses of S. thermophilus under different growth conditions to identify key regulatory genes and associated genes in regulating EPS production; 2 to examine whether enhancing these key regulatory genes including the genes from eps gene cluster revealed from the omics studies in step (i) will increase EPS production and the quantity of EPS during milk fermentation by S. thermophilus ASCC 1275; 3 to carry out preliminary idenitication of essential nutrients, such as amino acids and carbohydrates (glucose, galactose, lactose) for EPS production; and 4 to carry out preliminary characterization of EPS produced from S. thermophilus 1275.
