Objectives
1 To investigate whether GABA-enriched milk reaches brain tissues as the target organ, and exhibits anti-hypertension effect in rats; 2 To investigate the interactive behavior and microbial physiology at the molecular level using meta-transcriptomic analysis of nutrient uptake between high GABA-producing Lb. brevis and conventional dairy starter, S. thermophilus; 3 To examine the feasibility of manufacturing GABA-rich and MSG-reduced fermented milk by co-culturing high GABA-producing Lb. brevis with S. themophilus with a reduced level of MSG to avoid flavor issues.
