Objectives
Arabinogalactan proteins are a family of proteoglycans widely distributed in plants and abundant in some tubers. AGP from other plant sources are an important food additive for control of food stability and texture. Root and tubers crops are being investigated as alternative sources of AGP and the deposition, structure and functionality of AGP from tubers is being studied.
